Football Munchies: Game Day 7 Layer Dip


It's football season. Wether you're cheering for your favorite pro team (Go Seahawks and Patriots!) or your favorite college team (GO USC TROJANS!!!!), you'll need some reinforcements in the kitchen. Shockingly, I actually enjoy watching football. College football to be exact. So the last thing I want to do is be in the kitchen making meals. Football spectating should be about two things: easy and satisfying. So dips, wings, one-pot meals like chili and easy sandwiches are a guarantee to be a hit with your crowd and let you actually enjoy the game as well.

Probably my most often-requested food for Game Day is my super easy (I mean stupidly easy) 7 Layer Dip. It's California, it's Mexican, it has 7 layers of delicious goodness that you can make hours before the game. This recipe can be very easily doubled or even tripled to accomodate your group. And it keeps another day in the off-chance you have leftovers, which you probably won't.

Game Day 7 Layer Dip
1 can refried beans
your favorite hot sauce (recommend: Frank's Red Hot)
Easy Guacamole (get reipce here)
about 2 cups sour cream
2 cups finely shredded sharp cheddar cheese
3 roma tomatoes, chopped small
3 scallions, chopped small (or 1/3 cup white onions, chopped small)
1/4 cup sliced Spanish black olives, drained
tortilla chips for serving

Special Equipment: clear glass serving dish (a small lasagna dish works really well )


Place refried beans in a pan and heat through (or microwave). Season with salt and pepper, and hot sauce to taste. Layer the refried beans on the bottom of the serving dish. Top that layer with an even layer of guacamole, spreading it out to the edges so you can see the different colors. Repeat with a layer of sour cream on top. Top the sour cream with a generous layer of the cheddar cheese. Top with tomatoes, then onions, and finishing with the olives. You want it nice and densely covered.

Serve with tortilla chips or cover well and refrigerate until ready to serve. If serving later, let stand at room temperature about 15 minutes before serving.
